I didn't really expect them to have an episode on the Friday after Thanksgiving. That's even deader than a normal Friday in regards to TV viewing levels. Even the Bartowski's have their annual leftovers dinner. They aint watching TV. They're playing charades.
It's only a two week break, not three. Also, I'm assuming that unless those breaks are somewhere in there, the Christmas episode won't happen near Christmas. I'd rather have the delay than have the timing for that too badly screwed up.
